Vegan cookie dough can usually be frozen. What we have found works best is when you make the dough, form balls and then freeze the balls in either an air-tight container or ziplock style bag.
A good rule of thumb is that you can store most vegan cookies in an air-tight container and they will last for approximately 7 days. This is not guaranteed, but just a good rule of thumb.
In an air-tight container out on your counter is the best way to store these. A good tip is to store them with a sliced piece of bread inside the container to help them not dry out.
