Roasted Little Potatoes

It’s no secret that potatoes are life. Any shape, any form and anyone will be happy. But what I love about these baby potatoes is they can bring together any meal you serve in a simple and easy way.

Honestly, the secret to these is simple. Hot oil caramelizes the cut side of the potatoes creating an ultimate crisp while a combination of simple flavor pairings (fresh garlic, salt and pepper) give it a bold pop of flavor.

Pair it with an even more simple side, our lemon garlic asparagus and you have two sides that always work together that will please any family or guests you have!

Roasted Baby Potatoes Recipe Ingredients

  • Baby Potatoes – we are using tri-color baby potatoes simply because th color variation is appealing to the visual eye. You can also use other baby potatoes like yellow, red, or any combination of both.
    • Substitute: You could also use use regular or sweet potatoes with this recipe and cube them. Twenty-four ounces is about 2 large potatoes, so keep in mind if you do more than that to increase your other ingredients.
  • Garlic – fresh garlic adds a lot of flavor with little work, especially when you are roasting in the oven like this.
    • Substitute: You can substitute the fresh for dried garlic by adding 2 teaspoons of dried powder when adding the salt and pepper.
  • Olive Oil – Oil is used to not only make sure the potatoes don’t stick to the sheet pan, but also to help with richness, flavor, and caramelization.
    • Substitute – If you are oil free, go ahead and just spritz your potatoes with water and then your spices with adhere to that. You will also want to make sure you are using a silicone mat or parchment paper on your baking sheet so that your potatoes don’t stick.
  • Spices – we are keeping this simple by just doing salt and pepper. While we recommend doing this to taste, you can start with ½ teaspoon of each as a general recommendation.
    • Substitute: Feel free to use your favorite spice blend or combination of spices in addition or in place of the salt and pepper. Some of our favorites include Italian seasoning, BBQ seasoning, Taco Seasoning, or a combination of garlic and onion powder, paprika, and oregano. Depending on what you’re serving with them, feel free to get creative.

How to Roast Small Potatoes in Oven

  1. Start by preheating your oven to 400˚F. Place the halved baby potatoes on a baking sheet and drizzle with oil. Sprinkle across the garlic, salt and pepper and then with a spatula or your hands toss to combine everything evenly. Lay potatoes in a single layer.
  2. Place in the oven and bake for 40-50 minutes or until a fork easily pierces through to the middle. Remove and let cool for 5 minutes. Serve.

Tips For Making The Best Small Roasted Potatoes

  1. Make sure your potatoes are in an even layer. Overlapping your potatoes will result in parts under and over cooked, soggy, and steamed in textured rather than roasted.
  2. Place them cut side down. This helps to ensure the ultimate crisp texture when the starchiness from the open potatoes make contact with hot oil.
  3. Dry them! – Wet potatoes after washing have a harder time getting proper crisp so give them a towel bath prior to starting the recipe.
  4. Get Creative! – Potatoes have a very neutral taste so add some diced onions, fresh herbs afterwards, or simply swap out the spices depending on what you’re serving. Add taco seasoning if it’s taco night, or go for an all-purpose BBQ seasoning if it’s summertime.

One of my favorite things to do throughout the year is serving them with a simple dish like brown sugar glazed tofu and then pair with an arugula salad on the side as well.

How to Store Oven Roasted Baby Potatoes

Once your baby potatoes with garlic is roasted, you can let cool and then choose an option:

  • store in the fridge for 3-4 days in an air tight container
  • store in the freezer for up to 3 months

What’s the difference between baking and roasting?

Baking and roasting can be confusing, especially if you are new to being in the kitchen. Essentially, they are somewhat the same; however, just a tad different.
Roasting refers to cooking something, usually in an open dish, at a temperature higher than 400 degrees F.

Do you peel the skin before roasting?

No.
The skin of baby potatoes is thin and softens in the oven. Even if you don’t normally like the skin on potatoes, we bet you won’t mind it on these baby potatoes.
Leave the skins on and reap the benefits that are in the baby potatoes skins.

We don’t recommend that you freeze this recipe.

Can I make oven roasted baby potatoes with garlic without oil?

Yes. You can make roasted pumpkin without oil. Just omit where it calls for it. However, the texture on the potatoes will not be as crispy. We also recommend that you place then on a silicone baking mat.
