Growing up in a Jamaican household, jerk seasoning was more than just a flavor—it was a way of life. Whether we were grilling in the summer, tossing vegetables into a skillet, or making a special dish for the holidays, this fiery, aromatic blend always found its way into the kitchen.

As soon as I went vegan, I knew I need to create similar bold flavors in my dishes. I’ve used my experience to fine-tuned this jerk seasoning recipe so that it hits those bold, traditional notes while being accessible, customizable, and totally plant-based.

Now I can throw it on some tofu for a delicious jerk tofu recipe that even my mom loves to eat.

What is Jerk Seasoning?

This isn’t just any spice blend—it’s the heart of Jamaican cuisine, grounded in history, culture, and the kind of flavor you don’t forget. And there’s no jerking around about that.

It hits all the notes – spicy, smoky, sweet, and savory. There’s something very unique about it that brings food alive, no matter what you’re using it for.

Jerk itself refers to a cooking method that is popular in Jamaica and originated in the Taino tribes of the island. It is where something is cooked over open flames, usually on pimento wood slabs or more popular today, grilled, and used to preserve and flavor food, especially meat.

Today, I’m sharing my go-to homemade version so you can keep a jar in your pantry, ready to transform everything from tofu to veggies, beans, and even nuts or popcorn if you want.

Let’s dive into everything you need to know to make it from scratch–including half the spices from your spice drawer.

Why homemade is better

You know the saying “mama always makes it better”? Well, that’s true in this case which is why I consulted her to make my authentic blend.

Not only does this give you the ability to make it more or less spicy, it gives you the ability to increase or decrease the flavors of all the spices.

What is Jerk seasoning made of?

Seasonings:

If you’re wondering what spices are in jerk seasoning, we got you covered! Don’t let the list daunt you, but together, it’s amazing!

  • dried thyme
  • onion powder
  • garlic powder
  • brown sugar
  • dried scotch bonnet powder
  • white pepper
  • ground cinnamon
  • ground allspice
  • sea salt
  • ground cloves
  • dried parsley
  • paprika
  • turmeric
  • red pepper flakes
  • cumin
  • ground nutmeg
  • ground ginger
  • coriander

Substitutes:

Brown sugar – The molasses in the sugar helps with the flavor profile of this seasoning so we want something that’s just as bold. Coconut sugar or date sugar would be great swaps if looking for a more whole-food sweetener.

Salt – While salt enhances the flavors of dishes, it can be omitted or reduced if you need a low-sodium variation.

Ground Scotch Bonnet Pepper – this is a harder to find ingredient. It can be swapped with cayenne if you need., doubling the amount if you really want the heat that scotch bonnets give.

Heat – Ground scotch bonnet and red pepper flakes together make for a very spicy combo, which is what jerk seasoning is known for. If you need to make this less spicy you can cut both ingredients in half or to your desired taste.

How to Use Jerk Seasoning

While traditionally this blend is used on meat, even as a vegan you can use this on a variety of main ingredients. Here’s some ways to use:

  • Tofu (pan-fry, bake, or grilled)
  • Cauliflower
  • Mushrooms
  • Legumes (chickpeas, lentils, or other beans-black, cannellini, pinto, etc)
  • Jackfruit
  • Grilled or roasted vegetables
  • Snacks like popcorn, nuts, or make a Chex mix with it

Dry Rub vs Wet Rub

If you want to use this as a dry rub on something like tofu, you will just rub the combined seasoning gently into the ingredient. Dry rubs are great for creating a delicious outer crust.

If you’d like to make this into a wet rub, combine 3 ½ teaspoons of olive oil (or other neutral oil) with ½ tablespoon fresh lime (or white vinegar), and 3 teaspoons of jerk seasoning. Wet rubs are perfect for locking in moisture and creating more tender ingredients.

Vegan Recipes to Use with Jerk Seasoning:

*For the last recipe, swap the taco seasoning for this jerk seasoning and use the walnut meat in a variety of dishes.

How long is this good for?

Once made, your blend should be stored in an air tight container in a cool, dry place. It is good for 6 months when stored properly.

Can this be frozen?

If you don’t think you can or will use all the seasoning within 6 months, this can be frozen in an air tight, freezer-safe container for up to 12 months.

Is jerk seasoning kid-friendly?

The entirely depends on the spice tolerance of your kids. You can make a mild jerk seasoning by reducing the scotch bonnet powder and chili flakes by ½ or even more if very spice adverse.

Is jerk seasoning spicy?

Jerk seasoning is a spicy seasoning as it contains dried scotch bonnet pepper, white pepper, and red pepper flakes. You can make less spicy by reducing the amount of these ingredients inside your recipes when creating.

Is jerk seasoning gluten free?

Jerk seasoning only contains simple spices making this recipes 100% gluten free.
