    These easy gluten free vegan coconut flour waffles are quick to make and only need 10 ingredients. No one will be able to tell they are completely gluten free. 


    Whether you are gluten free because of celiac or preference, it doesn’t change that you’d love waffles or pancakes still. These easy vegan coconut flour waffles are the answer. 

    Look, we know. People want quick and easy recipes. Especially at breakfast. Usually we are on the run or just tired from the day before. 

    If we are able to get a meal prepped ahead or it’s just plan easy to make in the morning, then that’s a win for everyone.

    What ingredients do I need for vegan coconut flour waffles?

    You only need 10 ingredients for these gluten free vegan waffles. 

    Full amounts listed in the printable recipe card listed below.

    • vegan milk 
    • apple cider vinegar
    • gluten free flour blend
    • coconut flour 
    • baking powder 
    • salt 
    • coconut sugar
    • maple syrup 
    • vanilla extract 
    • coconut extract (optional)

    Can I add nuts or berries to the mixture?

    Yes!  We love putting raspberries or blueberries right Inside the mixture, but chopped almonds or walnuts are great too if not allergic. 

    What gluten free flour blend do you recommend?

    We have had the best results with this King Arthur Gluten Free Measure for Measure flour. 

    Can I only use coconut flour?

    Coconut flour need a high volume amount of liquid for a little amount of flour. We have found it best to combine the two. 

    What vegan milk do you recommend?

    We prefer oat milk; however, any plant based milk will work in this recipe.  If you love the coconut flavor, coconut milk is great in it.  

    Can I sub the coconut sugar?

    You could sub the coconut sugar for brown sugar if needed. 

    How do you make vegan coconut flour waffles?

    First combine the milk and apple cider vinegar together. Let sit for 10 minutes.  This makes vegan buttermilk. 

    While waiting, in a bowl, combine all the dry ingredients.  Whisk together.

    When ready, pour in the vegan buttermilk, maple syrup, and both extracts. 

    Combine with a spatula, just until blended together. 

    Let mixture sit for 20-25 minutes. It will thicken up and this is what you want for your waffles. 

    Once your mixture has sat, then proceed with cooking the waffles according to your waffle maker instructions. 

    Repeat until no mixture is left. 

    Can I make pancakes with this recipe?

    You definitely can.  The pancakes will not be super fluffy, but pancakes none the less.  You also want to make sure that you cook on a medium low temperature. 

    What waffle maker do you recommend?

    For these photos we are using this Farberware 4 slice waffle maker. 

    If you prefer Belgian waffles, we love this Cuisinart Belgian waffle maker. 

    Can I prep gluten free coconut flour waffles ahead of time?

    Yes!  Once made you can store in the fridge in an air tight container for up to 5 days. 

    Can I freeze these vegan coconut flour waffles?

    Yes! Once completely cooled you can freeze. We recommend to flash freeze by laying the waffles on a baking sheet. Freeze for 10-20 minutes and then store in a freezer safe container or bag. 

    Can these be Top 8 Allergen Free Coconut Flour Waffles?

    The only Top allergen is coconut. Otherwise this recipe is allergen free.

    Equipment

    • Waffle maker

    Ingredients

    • 2 cups plant based milk (we prefer oat)
    • 2 tablespoon apple cider vinegar
    • 1 ⅓ cups gluten free flour
    • ⅓ cup coconut flour
    • 1 tablespoon baking powder
    • ¼ teaspoon salt
    • 2 tablespoon coconut sugar (can sub brown sugar)
    • 3 tablespoon maple syrup
    • 1 teaspoon vanilla extract
    • ¼ teaspoon coconut extract (optional but we prefer)

    Optional Toppings

    • maple syrup
    • fresh fruit
    • nuts

    Instructions

    • First combine the milk and apple cider vinegar together. Let sit for 10 minutes. 
      *This makes vegan buttermilk. 
    • Combine all the dry ingredients.  Whisk together.
    • When ready, pour in the vegan buttermilk, maple syrup, and both extracts. 
    • Combine with a spatula, just until blended together. 
    • Let mixture sit for 20-25 minutes to thicken up..
    • Once your mixture has sat, then proceed with cooking the waffles according to your waffle maker instructions. 
    • Repeat until no mixture is left. 
    • Top with any syrup, fresh fruit, or other desired topping.

      Great waffles! Fluffy, crispy, easy to make and delicious. The only thing i changed was to swap maple syrup for oil, I just had none in my cupboard. Finally some proper vegan waffles! Thank you!

      I have been looking for a coconut flour waffle recipe, and I chose yours because of the vegan buttermilk! The first batch I made, I loved. I brought my waffle maker over to my partner’s house to make them some, but the recipe was on my home computer! I tried to do it through memory but…nope. LOL! Will repeat. Saved and loved, thank you for sharing!

      This recipe made great waffles…I was wandering if I could use spelt flour & the coconut flour and let sit overnight along with the other ingredients. What do you think?

        Glad to hear you enjoyed! We haven’t tried with spelt flour though we would think it would work though you may not need as much liquid
