How do you make vegan banana bread overnight oats?
It’s always so silly to me to write out overnight oats “recipe” because there isn’t much to it.
For this dairy free banana overnight oats, you are going to start by mashed your banana well. If you don’t mind chunks you can just push down with the back of the fork a few times; however, if you do, make sure you mash it well.
It’s important to note that you can use bananas at any stage of ripeness; however, the more ripe a banana is, the more sweet your overnight oats will taste.
Once you have your banana mashed, mix in everything except the walnuts and stir together. Put a lid on your bowl or container (we like using mason jars for easy on the go travel). Then, let it sit for 8 hours or overnight.
Add chopped walnuts, if desired, right before serving.

Absolutely!
The walnuts are completely optional. So as love as you omit those and choose a safe Top 8 allergy free milk like oat, rice, flax, or hemp, then this recipe will be completely Top 8 free.

Can I prep this vegan banana bread overnight oats ahead?
Yes! This can be prepped up to 3 days in advance. It’s nice sometimes to just make a big batch and then divide into separate jars and have breakfast ready for a few mornings!
We don’t advise that you put the walnuts on beforehand. So, if you are traveling with them or taking these to work with you, you can put the walnuts in a to go container and add once ready.
Do you serve overnight oats warm or cold?
This is entirely up to you! Traditionally, overnight oats are stored in the fridge and then you just grab and go in the morning without any additional work. Thus, served cold.
However, if cold foods bother you, then you can definitely warm it up!

Is there a way to make these a week in advance? Will they keep in the freezer?
LarishaBernard
Hi Jess! We do not recommend making these that far in advance. A day or two maybe but not a week. You could prep just the dry ingredients and put that in jars and seal them and place in your pantry, but the full recipe would get too soggy
Christine
I noticed your other overnight oats recipes call for 1/2 cup ND milk, but this one calls for a whole cup. Is that a typo, or does this one require more milk than the others?
LarishaBernard
Not a typo! The other ingredients in this one soak up more liquid than the other recipes so more is needed for a better consistency. You can start with 1/2 if you’d like and play around until you are satisfied
