- Non Dairy Milk – Besides soy milk, we’d also recommend canned coconut milk or fresh coconut milk if making by hand
- Maple Syrup – could sub with agave, dates, or date syrup
- Silken Tofu – if you want the added protein, but don’t do soy, you could add some unsalted, mild flavored nuts

Step 1. This step is optional, but adding your apples into a sweetened syrup and letting them reduce until softened is an amazing addition to the toppings for this smoothie bowl.
Step 2. Add all your smoothie bowl ingredients to a high speed blender.
Step 3. Blend until well combined and no large chunks remain.

Vegan Sweet Potato Pie Smoothie Bowl
Ingredients
Apple Topping (OPTIONAL)
- 1 fuji apple, diced
- 2 tablespoon maple syrup
- 1 teaspoon cinnamon
- ⅛ tsp nutmeg
- ⅛ tsp salt
For the smoothie bowl
- 2-4 tablespoon almond butter
- ½ block silken tofu
- 2 tablespoon maple syrup
- ¾ cup almond milk
- 1 teaspoon vanilla
- 1 cup frozen sweet potatoes
- 1 cup frozen banana
- ½ teaspoon cinnamon
- ¼ teaspoon ground nutmeg
- ⅛ teaspoon ground ginger
- ⅛ teaspoon salt
Instructions
- If making the optional apple topping, add the maple syrup to a small pot and bring to a simmer. Add spices and stir. Add the apples and stir together. Allow to cook, stirring often, for 3-5 minutes or until softened (time dependent on apple pieces size). Remove from heat.
- For the smoothie bowl, add all ingredients into a high speed blender and blend until smooth. Pour into a bowl and add any desired toppings.
