  • Silken Tofu – if you want the added protein, but don’t do soy, you could add some unsalted, mild flavored nuts

Step 1. This step is optional, but adding your apples into a sweetened syrup and letting them reduce until softened is an amazing addition to the toppings for this smoothie bowl.

Step 2. Add all your smoothie bowl ingredients to a high speed blender.

Step 3. Blend until well combined and no large chunks remain.

Can I make this dish top 9 free?

Use a safe milk alternative and you will need to omit or add a different protein source such as nuts (if you can have them) or pea protein.

Can I prep this dish ahead of time?

We don’t recommend making and prepping smoothies ahead of time; but if you have freezer safe containers, you can put the ingredients, except liquids, in the container and then when ready add the frozen ingredients, liquids and blend.

Can I double this recipe?

Yes, as long as your blender will hold the ingredients.

Can this be frozen?

We do not recommend freezing this smoothie besides the steps above.

Ingredients

Apple Topping (OPTIONAL)

For the smoothie bowl

  • 2-4 tablespoon almond butter
  • ½ block silken tofu
  • 2 tablespoon maple syrup
  • ¾ cup almond milk
  • 1 teaspoon vanilla
  • 1 cup frozen sweet potatoes
  • 1 cup frozen banana
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground nutmeg
  • teaspoon ground ginger
  • teaspoon salt

Instructions

  • If making the optional apple topping, add the maple syrup to a small pot and bring to a simmer. Add spices and stir. Add the apples and stir together. Allow to cook, stirring often, for 3-5 minutes or until softened (time dependent on apple pieces size). Remove from heat.
  • For the smoothie bowl, add all ingredients into a high speed blender and blend until smooth. Pour into a bowl and add any desired toppings.

    Made this for breakfast today, it was great! The portion size was hugeeee so when I make it in the future I’ll just split it and have half. I couldn’t find frozen sweet potatoes where I live in Toronto but I just roasted one at home the night before and blended it peeled/cold, and it worked fine. Threw on some chopped pecans I had in my pantry and it was fantastic.
