  • Light Coconut Milk – a light coconut milk allows us to get the flavor without the added calories
  • Ginger – Fresh ginger is preferred over ginger powder for this recipe
  • Zucchini – gives flavor, health benefits and a way to use it up in the summer if you have a lot of it

  • Non Dairy Milk – Besides light coconut milk, we’d also recommend soy milk, but any non-dairy milk will work
  • Ginger – You can use powdered ginger for this if that’s all you have on hand
  • Dates – if you want it sweeter, you can add dates, agave, maple syrup, or date syrup
  • Silken Tofu – if looking to add protein to this smoothie bowl, we’d recommend silken tofu for this particular one

Can I prep this dish ahead of time?

We don’t recommend making and prepping smoothies ahead of time; but if you have freezer safe containers, you can put the ingredients, except non-dairy milk and vanilla, in the container and then when ready add the frozen ingredients, milk and vanilla and blend.

Can I double this recipe?

Yes, as long as your blender will hold the ingredients.

Can this be frozen?

We do not recommend freezing this smoothie besides the steps above.

Ingredients

  • 1 cup spinach
  • ¾ cup light coconut milk (or desired non-dairy milk)
  • ¾ cup frozen mango
  • ¾ cup frozen pineapple
  • ½ small zucchini, sliced (Frozen preferred)
  • 1 tablespoon lemon juice
  • 2-3 teaspoon moringa powder, optional
  • 1 tsp fresh ginger, grated
  • 1 teaspoon lemon zest
  • ½ teaspoon turmeric
  • teaspoon salt

Instructions

  • Add all ingredients into a high speed blender and blend until smooth. Pour into a bowl and add any desired toppings.
