5 Vegan Dinners Under $40 Meal Plan at Aldi

Learn how to make 5 vegan dinners under $40 at Aldi! This Aldi meal plan will give you meals for a family of four under $2 per serving.

There is an assumption that vegan food means expensive. It can be, but it doesn’t have to be. We created this 5 Vegan Dinners Under $40 to show you that it doesn’t have to be expensive at all.

We wanted to show that for a family of four (basing this off our family with 2 adults and 2 kids under 10) you can eat realistic meals, made with minimal processing and still be able to do so on a budget.

Often times with budgets, people are either adding a lot of meat and dairy substitutes to their grocery lists or a lot of processed foods.

When you are spending $4-5 per meal on just the protein it can add up very quickly.

What are the 5 Vegan Dinners on the Under $40 at Aldi Menu

The meals that we shared were a variety and nothing repeated. We had pasta, a casserole, pizza, and two types of tofu.

How much did you spend?

Our total was $40.93. We did slightly go over $40 and in the video we discuss that is because I always forget about produce being weighed per pound instead of the price on the sticker. Because of that, when we bought the broccoli for the first meal, it pushed us over by $0.93.

However, we did purchase 2 bags of vegan cheese, unsure if we would need more than one for both the pizza and taco casserole. Therefore, we could have only purchase one and it would have put us under $37.

What did you have leftover?

Surprisingly, we had a ton of food left over that we could use for the next week or use for lunches throughout the week.

Specifically, we had left over:

  • 1/2 jar salsa 
  • Almost full jar of spaghetti 
  • 1/2 bag of coconut shreds
  • Half bag of potatoes 
  • 2 packs of yeast 
  • 1 1/2 -2 cups of rice 
  • 1/4 cup + 1 bag of mozzarella 
  • 3/4 container of oat milk 
  • 1 1/2 green peppers 
  • 3 1/2 onions 
  • 1/2 box pasta 
  • 1/2 container of breadcrumbs 
  • 1 1/4 bulbs garlic 
  • 4 limes 
  • Most of bottle of soy sauce 
  • 3/4 bag flour 

What else could I make with the leftovers?

Some of the things that we mentioned in the video were extra pizzas, baked potatoes, and spaghetti.

We also mentioned that you could easily grab another 2 blocks of tofu and recreate both tofu meals. It would be easy to spend another $10 the following week and have another 5-7 meals based off of what is left over.
