To start, cook your rice according to the instructions. We like a quick cook brown rice with this dish so it is ready when the sweet potatoes are too.
Peel and cube your sweet potatoes. Toss with olive oil and cajun seasoning.
Bake at 425 degrees F for 25-35 or until a fork pierces through easily, flipping once halfway through.
Warm the black beans.
Put the bowl together by laying rice at the bottom, then topping with some of the sweet potatoes and black beans. Plus, any additional toppings that you want to add.

Ingredients
- 1 cup brown rice
- 2 sweet potatoes
- 1-2 tablespoon cajun seasoning (2 is really spicy, adjust as needed)
- 2 tablespoon olive oil (if oil free, spray with water and use parchment paper)
- 1 can black beans, drained and rinsed

Do you drain and/or rinse the black beans before adding them to the recipe? (When I became vegetarian, I learned to always do both, but my fiancé doesn’t rinse, only sometimes drains, canned beans – especially in his Bajan Rice&Peas. I guess it makes it gravy-like?)
