These vegan cajun sweet potatoes and black beans rice bowls are an easy pantry meal that comes together with little effort. Ready in 45 minutes to make and Top 8 Allergen Free.

Rice bowls are an easy way to get dinner on the table that is filling and versatile. These cajun sweet potato and black beans rice bowls are no exception.

The hardest part about this dish is waiting for the sweet potatoes to cook through.  

The basis of the dish is the rice, sweet potatoes and black beans, but after that it’s really up to you. 

You could get really creative with the toppings.  Want corn, add it! How about avocado, salsa, cilantro, you got it! Roasted red peppers, green onions, throw in some roasted beets. The possibilities are really endless!

  • sweet potatoes
  • cajun seasoning
  • olive oil
  • black beans
  • brown rice
  • any optional toppings

How do you make Vegan Cajun Sweet Potatoes and Black Beans Rice Bowls?

To start, cook your rice according to the instructions. We like a quick cook brown rice with this dish so it is ready when the sweet potatoes are too. 

Peel and cube your sweet potatoes. Toss with olive oil and cajun seasoning. 

Bake at 425 degrees F for 25-35 or until a fork pierces through easily, flipping once halfway through. 

Warm the black beans. 

Put the bowl together by laying rice at the bottom, then topping with some of the sweet potatoes and black beans. Plus, any additional toppings that you want to add.

Ingredients

  • 1 cup brown rice
  • 2 sweet potatoes
  • 1-2 tbsp cajun seasoning (2 is really spicy, adjust as needed)
  • 2 tbsp olive oil (if oil free, spray with water and use parchment paper)
  • 1 can black beans

Optional Toppings

  • avocado slices
  • diced tomatoes
  • green onions
  • red onions
  • salsa
  • vegan sour cream or cheese

Instructions

  • Preheat oven to 425 degrees F
