While this recipe is dough based, there’s no yeast, so the recipe comes together quickly and no waiting for a rise or hoping that your yeast is active. There’s also no need to use any cutters or molds, just drop a big ol’ scoop of batter into some hot oil and let the oil work its magic.

NO YEAST VEGAN APPLE FRITTERS INGREDIENTS:

Below are notes about the ingredients before we get into the full recipe located lower in this post on how to make these vegan apple fritters:

  • flour – we use all purpose flour for the recipe to make it wasy and accessible for most people
  • brown sugar – Sugar helps with sweetness, and brown sugar helps with moisture from the molasses as well. If you want to learn more about why your sugar may not be vegan, you can learn more by clicking on the link.
  • applesauce – this is acting like an egg in the recipe, but also helping with moisture and texture. We are using unsweetened applesauce in this recipe.
  • baking powder – this is to help the fluffiness and rise of the donuts since there is no yeast added to them.
  • apples – we prefer to use a mixture of sweet and tart apples to give variation in the recipe. For the photos we used fuji and granny smith. Gala would be another alternative.

SUBSTITUTIONS AND VARIATIONS:

  • flour – gluten free flour can be used
  • brown sugar – you could sub for cane sugar, coconut sugar or granulated date sugar
  • applesauce – mashed bananas or another fruit puree could be used, as well as flax egg (see FAQ below)
  • apples – try other fruit like berries, bananas, or peaches instead of the apples! be mindful of the juiciness of what you swap as you may need to adjust some ingredients

WHAT IS THE DIFFERENCE BETWEEN A DONUT AND A FRITTER?

A donut and a fritter has similarities in that they are both forms of fried dough. Donuts may or may not be yeast, the same with fritters. The key difference is that fritters have their filling folded into the batter before being fried; whereas, donuts are usually either piped inside the dough after being fried or the filling is put onto the top.

CAN I MAKE THESE VEGAN DONUTS TOP 8 ALLERGEN FRIENDLY?

There is flour, dairy free milk, and vegan butter in this recipe.
If you are completely Top 8 Free, use an alternative dairy free milk like oat or hemp for this recipe. 
For the vegan butter, use a soy free version like Flora or Earth Balance soy free.
And for the flour, sub with a gluten free 1:1 flour blend.

HOW LONG ARE FRIED VEGAN DONUTS GOOD FOR?

Honestly, these are best consumed immediately; however, they will last for up to 2 days when stored in an air tight container. 
Best if warmed for 10-15 seconds if not eating immediately or air fried at 350 degrees F until warmed (about 5 minutes).
They can be stored at room temperature and do not need to be refrigerated. 

CAN I REPLACE THE APPLESAUCE WITH SOMETHING ELSE?

Yes! Mashed banana (will add a banana flavor) or sweet potatoes can be used. Alternatively, you could use flax egg (2 tablespoon ground flax and 6 tablespoon of water mixed together and let sit for 7-10 minutes until gelantinous).
This purpose of using this is to be the “egg” in the recipe. So you can use any of these in a similar manor.

Ingredients

For the Glaze

Instructions

  • To a large heavy bottomed pot, add a few inches of oil. Heat to approximately 350 degrees F. Line a baking sheet with paper towels.
  • In a large bowl, add flour, brown sugar, baking powder, salt, cinnamon and nutmeg. Whisk together.
  • In a separate bowl, add non dairy milk, applesauce, butter, and vanilla. Stir wet ingredients into the dry until just combined. Do not overmix.
  • Add chopped apples to the batter and stir again, just until combined well, making sure not to overmix.
  • Once oil is hot, drop ¼ cup of batter into the oil. Do not overcrowd your pot and work In batches to use all the batter. Fry until golden brown, about 2-3 minutes per side, flipping halfway. Remove and place on prepared baking sheet.

For the Glaze

  • Add all the glaze ingredients, except salt, to a bowl and whisk together well, Allow fritters to cool and dip or drizzle glaze over the top. Sprinkle with salt if desired.

    1. Baked possibly, we haven’t tried. But it’s not going to work in an air fryer because of the holes in the trays.

    2. Some Air Fryers have silicone mats to line their trays for just that reason / but I’ve never used one, so it’s still trial and error..

    Recipe came together very quickly and was way easier without the yeast. Fritters were delicious. I used 2 tbsp Bobs Red Mill egg replacer with 2 tbsp apple cider vinegar and water to replace the apple sauce. Best eaten same day as anything fried and glazed gets a little soggy the next day. Pop them in the microwave for next day delight.
