Rocky Road ice cream is a classic. So many people love it for its spin on the classic chocolate ice cream recipe. This vegan rocky road ice cream is no exception. It’s absolutely delicious, full of flavor, and best of all, no ice cream maker is required!
You read that right, there’s no need for an ice cream maker for this amazing sweet treat.
You only need a few ingredients, a couple hours in the freezer and then perfection!
In case you don’t know, Rocky road ice cream was created in the 20s and was a punny name for how people felt during the Great Depression. It’s a chocolate ice cream with marshmallow pieces and almonds. Some people add chocolate chip pieces as well.
Because we like to be a little fancy, we also like vegan chocolate sauce drizzled on top too!

While the video doesn’t show you how to make rocky road, it does give you a basis for how we did make it using the same techniques.
What ingredients do you need to make vegan Rocky Road ice cream?
You need less than 10 ingredients to make this delicious dairy free ice cream recipe. That little fact my blown your mind with excitement, but it’s really a super simple recipe.
The ingredients that you need are:
- Cocoa powder
- Full fat canned coconut milk or Store bought vegan whipped topping
- Vegan Condensed Milk
- Vanilla Extract
- Almonds
- Vegan Marshmallows
- Optional: Vegan Chocolate Chips and/or Vegan Chocolate Sauce
How do you make vegan Rocky Road ice cream?
There are a few steps that you need to do in order to make this, but you don’t need any ice cream makers or other non-standard appliances.
To start, you need to make your homemade vegan condensed milk.
If you are using store bought vegan condensed milk you can skip that step.
Once you have your condensed milk prepped or ready from the store, then you will start by whipping your coconut whipped topping. Follow the instructions for making it from home or pour out the contents of the tub and whip it.
If you are making it from canned coconut milk, you will whip until stiff peaks form. If you are using store bought, then just blend until smooth consistency.
Next, whip in your vegan condensed milk and vanilla extract. Finally, whip in the cocoa powder.
Once you have all that together, fold in your chopped almonds, marshmallows, and optional chocolate chips.
Pour into a reusable ice cream container or freezer safe, air tight container and store at least 6 hours or overnight.
Scoop out amount desired as needed, drizzling with vegan chocolate syrup if doing so.
Can I make this Top 8 Allergen Friendly Rocky Road Ice Cream?
I’ll be honest, this one isn’t super easy to make Top 8 Free. The main difference that separates Rocky Road from Chocolate ice cream is the addition of almond (or walnuts) and marshmallows. If you omit both, you just have chocolate ice cream (which would still be delicious).
In addition we are using coconut whipped topping and condensed milk.
So let’s walk through this. We can replace the coconut whipped topping with an almond or rice whip topping depending on allergens. Both of those come in spray cans.
For the vegan condensed milk, we clearly outline how to make it in our linked post with any type of dairy free milk, so you could use oat or flax for Top 8 Allergen Friendly.
Ok, so we have those two things covered. Now, you could just omit the nuts and use marshmallows if you have a nut allergy. I wouldn’t really recommend adding sunflower seeds to this.
As far as vegan marshmallows go, our go to brand is Dandies, but they contain soy. We did find a soy free vegan marshmallow on Amazon, but we personally haven’t tried it yet.
How long will vegan ice cream last in the freezer?
For the most part, as long as you are using products that don’t expire soon, vegan ice cream will last 3-6 months if stored properly. Then again, that’s if it lasts that long!
What store bought products do you use?
Making this store bought, definitely makes the process go faster. Our preferred products, if no coconut allergy is present, is So Delicious coconut whipped topping in the tub and the canned sweetened condensed coconut milk.
We use Dandies marshmallows and Enjoy Life chocolate.

Ingredients
- 2 cans full fat coconut milk (Or 1 tub frozen vegan whipped topping)
- 1 vegan condensed milk recipe
- 1 teaspoon vanilla extract
- ¼ cup cocoa powder
- ¼ cup almonds, chopped (add more if desired)
- ¼ cup vegan marshmallows, chopped into tiny pieces (add more if desired)
- Optional Chocolate Chips
- Optional: Chocolate Syrup
Instructions
- If making vegan condensed milk, make that first. *Skip this step if using store bought.
- If making whipped topping from scratch, in a large bowl, scoop out the fat content from the top of your canned coconut milk and whip until stiff peaks form. *If using store bought, pour out the contents of the tub and whip it.
- Beat in vegan condensed milk and vanilla extract.
- Add in the cocoa powder and beat until until blending, scrapping bowl down as needed.
- Fold in chopped almonds, marshmallows, and optional chocolate chips.
- Pour into a reusable ice cream container or freezer safe, air tight container and store at least 6 hours or overnight.
- Scoop out amount desired as needed, drizzling with vegan chocolate syrup if desired.
