What ingredients do I need for vegan soft pretzels?

You only need eight ingredients for this super easy vegan pretzel recipe.

We start with the base of our vegan everything dough recipe and then just add 2 extra ingredients to make the pretzels.

The ingredients that you need are:

  • Flour
  • Instant Yeast
  • Salt
  • Dairy Free Milk (we like Oat- you can sub this out for water)
  • Maple Syrup (can sub with vegan cane sugar or agave)
  • Vegan Butter
  • Salt Flakes (or coarse salt)
  • Baking Soda

If you want to make the cinnamon sugar, you will also need cinnamon and vegan sugar.

If you want to make the garlic parmesan version you will also need garlic powder and a sprinkle version of vegan parmesan.

That’s it! Can you believe that’s all you need?

How do you make Vegan Soft Pretzels?

In a large bowl, whisk together the flour, yeast, and salt.  Then, add in the dairy free milk and maple syrup.

Using a spatula, fold until mostly combined.  Sprinkle a little more flour if you need to not be sticky and form a ball.

Once your ball is formed, you will want to grease the same bowl you mixed in and place the dough ball back into the bowl.

Cover with a towel or plastic wrap and let sit for 60-90 minutes in a warm, draft free place.

Once doubled in size, pull out the dough and lay it out on a lightly floured surface.  Keep covers with the plastic or towel while you work.

Preheat oven to 375 degrees F. Add parchment paper to a large baking sheet and set aside.

In a large bowl, add very warm water and stir in baking soda.

Cut a 1-inch vertical strip of dough from the ball. Roll into a 16-Inch long rope.

To form pretzels, make a U-shape with the rope.

Holding the ends of the rope, cross them over each other like an X and press onto the bottom of the U and place on prepared baking sheets.

Press ends of pretzel into pretzel dough so it attaches.

Dip the pretzels into the water mixture and then place on the baking sheet. Brush with butter.  Repeat with remaining dough.

Bake for 18-20 minutes or until golden brown.

Brush with more butter and sprinkle with salt or dip in topping mixture.

Give a few minutes to cool before serving.  Best served warm.

Can I prep these vegan pretzels ahead?

Yes!  You sure can!  There are two options.

  1. Once you make the dough and cover it to rise, you can place the bowl in the fridge up to 2 days before you plan to use it.
  2. You can make the entire recipe and then store your pretzels in an air tight container for up to 3 days. After this they start to get a little hard even if warmed back up.

Also, you could use half the dough at a time. For example, once the dough has risen, split in half.  Make the pretzel bites with one half and then 2 days later make the other half.

Can I freeze these vegan pretzels once made?

Yes!  Make and let cool completely.  Then, you can flash freeze on a baking sheet so they won’t stick together and then put them in a bag.

Use within 8 weeks.  Let thaw to room temperature and then warm in a microwave.

Are these vegan soft pretzel bites Top 8 Allergen Free?

Unfortunately, at the time, we cannot recommend using a gluten free flour with this recipe.  Please know that we are working on a gluten free dough, but it’s just not quite there yet.

Otherwise, as long as you use a safe dairy free milk or water, (like we said Oat is our favorite) then you will be all set.

  2. Hello,
I have came across your website and I LOVE all the recipes I am seeing, I was wondering do you have any recommendations on the different kinds of flour I can use. My son is allergic to wheat, oats, peanuts, tree nuts and anything dairy its easy to eliminate peanuts in recipes but Gf flour makes things just taste weird and my son hates it lol. I have coconut flour and was seeing for all the muffin recipes do you think it would be still okay to use coconut flour?
if you respond I will greatly appreciate it! I want my son to enjoy being vegan plus more and not just have to eat veggies and fruit as he is only 18 months.:(

    1. Hi. For our yeasted dough recipes we don’t have a recommendation for GF at this time. For things like muffins we have successfully made most of them with King Arthur measure for measure flour.

I was a little intimidated by this at first – I’ve never made pretzels before. But the ingredients were all things I already had at home, and the instructions were really easy to follow. SO easy, in fact, that I’ll be making these regularly! Thanks, Andrew and Larisha!

These pretzels are delicious! I made a half batch since there’s just two of us. Big mistake – we were both so sad when the last one was gone. Next time I’m going to make the whole recipe and freeze the leftovers. Thanks for such a great recipe!
