Recently, we saw that Lizzo made vegan ice cream bread on her Tik Tok channel.
Being honest, we weren’t even sure what vegan ice cream bread was. Like literally never even heard this was a thing. We were like huh? how? why? what?
However, after watching the tik tok video and doing some research, we were much more knowledgable and knew we could figure this out, likely even better than the recipes were were seeing.
I mean one major website said that the bread wouldn’t work with dairy free ice cream and we were like uhh, yea, no, we’re making that happen.

What is the best type of flour to use for ice cream bread?
If you use self-rising flour, then you don’t have to use the baking powder and salt. It will already be in there you.
However, if you don’t have self-rising flour, you can just use all purpose and add the baking powder and salt like we do below.
We have not tried doing this with a gluten free flour; however, we have had the best of luck with King Arthur Measure for Measure flour. It should work in a recipe like this.
Can I prep ice cream bread ahead?
Yes. This bread will last in an air tight container for up to 7 days.
Can I make this Top 8 Allergen Free?
The vegan ice cream and flour could both cause concerns depending on your allergies.
You can use any vegan ice cream flavor so choose one that does not contain soy or nuts.
As far as the flour, we have not tried doing this with a gluten free flour; however, we have had the best of luck with other recipes using King Arthur Measure for Measure flour. It should work in a recipe like this.
What was the original recipe you used for the first vegan ice cream bread?
We made two different vegan ice cream breads (see the video below).
For the first one, we followed directions on a majority of websites across the internet.
For this recipe we used
- 1 pint vegan ice cream
- 1 ¼ cups all purpose flour
- 2 teaspoon baking powder
- ½ teaspoon salt
If you only want this to be a 2 ingredient recipe you can use the same amount of vegan ice cream and 1 ¼ cups self-rising flour. Omit the baking powder and salt if using self-rising flour as it already contains it.
This should be cooked at 350 degrees for 30-35 minutes.
Why did you try another recipe?
The first recipe, while it works, and comes out perfectly, it’s a very short/flat cake.
We knew that we could use similar ingredients and make an even better cake with just a few changes to make the vegan ice cream bread actually look like a loaf of quick bread.
What are you final thoughts about the vegan ice cream bread?
We get how this is fun, but because of the cost of vegan ice cream, we personally didn’t find it to be worth the cost.
We would rather just eat the vegan ice cream with a spoon.
The bread was insanely moist and so soft though.
We do think, even with the entire pint of ice cream, that the bread could have been more sweet and if we ever made this in the future, we would add a bit of sweetener.
How would you use vegan ice cream bread?
Obviously you could just slice and eat, but while we were talking we said that it would be fun to make like a strawberry shortcake out of this by layering strawberries and vegan whipped topping.
Lizzo also used it to make french toast, so you could follow our instructions for vegan french toast or a vegan french toast casserole to make something similar.
You could also make a triffle with it.
Vegan Ice Cream Bread
Ingredients
- 2 cups all purpose flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
- ½ cup dairy free milk
- 1 pint dairy free ice cream, softened well, but not melte
Instructions
- Preheat oven to 350 degrees F. Line a bread pan with parchment paper (optional). *If not lining, grease the pan.
- In a large bowl, whisk together flour, baking powder and salt.
- Add in the milk and softened dairy free milk
- Stir together very well until no flour remains.
- It will be sticky, but carefully remove from the bowl and into the baking pan and spread as evenly as possible.
- Cook for 40-45 minutes or until a toothpick inserted comes out clean.
- Remove and let cool. Serve.
