Chickpeas

Chickpeas are the protein source for the recipe as well as then vegan chicken replacement. Chickpeas are the easiest and most budget friendly option for replacing chicken in vegan recipes.

Substitute: You could do any type of white bean instead, but you could also do soy curls cut into thirds or you can use grilled vegan chicken strips.

Vegetables

Onions, carrots, celery, and garlic start the recipe off by sauteing and building flavors. Towards the end of the recipe, you’ll add in green peas.

Substitute: While we recommend keeping the base ingredients, you could get creative when adding more ensuring just that they good in the same amount of time.

Other ingredients could include: peppers, potatoes, corn, green beans, and/or mushrooms.

Coconut Milk

We love using canned coconut milk whenever we need a liquid in a sauce. Because of the high fat content, coconut milk is super creamy and mimics a heavy cream flavor and texture.

Substitute: Any non-dairy milk will work for for this recipe.

For The Dumplings

  • In a large bowl, mix together the flour, baking powder, baking soda, salt, pepper, and nutmeg. Then mix in the melted butter, maple syrup and vegan milk until well incorporated. The dough will be on the dry side, like biscuit dough. Set aside while you start your gravy.

Gravy Sauce

  • In a large pot (dutch oven or stock pot), heat oil over medium heat. When hot, add in celery, onions, and carrots. Allow to cook for 3-5 minutes or until vegetables have begun softening. Add in garlic and all the spices and stir together.

  • Add in flour and stir together. Then immediately add vegetable stock, coconut milk, peas, chickpeas, and vegan better than bouillon. Turn down to simmer and allow to cook for 10 minutes.

  • Using a spoon or cookie dough scoop, drop scoops of the dough into the gently simmering soup. Carefully spoon the liquid mixture over the dumplings to ensure even cooking. Cover pot with a lid and all to cook for 10 more minutes.

Frequently Asked Questions

Can I prep vegan chicken and dumplings ahead of time?

Yes!  This will last for 3-5 days stored in an air tight container. 

Can you make this Top 9 Allergen Free?

We have not tried this recipe for gluten free dumplings at this time so cannot recommend a gluten free variation. As far as other top allergens, just make sure to use a safe for you non-dairy milk and butter.

    31 ingredients seems like a lot, but every one of them are needed to created this masterpiece. Mylanta!

    I made this for my family last night and it was so incredibly good. Most recipes with coconut milk taste a bit like the coconut milk, even if it’s savory. Not this. The only thing I’d do differently next time (there will definitely be a next time) is add mushrooms and maybe some potatoes.

    Thanks for making vegan recipes that actually taste good.

    This dish is a rockstar! Very flavourful, though I did add extra bouillon because I liked the flavour. This was simple to put together and I love working with spices. The dumplings, which I had never made before, were super easy and had a wonderful texture. You couldn’t ask for a more comforting dish on a cold rainy night! This one will definitely be on rotation! I’m going off to make the red pepper pasta for dinner tonight!

    Fantastic and easy recipe. The flavors were amazing, but the real stars were the dumplings. I thought we were going to have enough for leftovers… my two teens had other ideas and went back for seconds to finish off the pot.

  4. Made this tonight for our family dinner & it was a HUGE HIT! It was as so easy and came together pretty quickly. It was perfect proportions of carbs protein, and colorful veggies. We were out of peas but had green beans which worked perfectly, & I added a big handful of chopped fresh kale before I added the dumplings.
    Perfect! I think this recipe is very versatile to swap veggies as you like. The dumplings really expanded too but were so tender and flavorful! Thank you for this recipe and I love your voice! I try and make several of your recipes that I can in a house that doesn’t like much spice (besides me). They all look so good!

    absolutely delicious! I used kidney beans instead of chickpeas. I will be making this regularly. it’s a great option to serve to non vegans.

    Fantastic! It’s a chilly winter here in Montreal and this recipe was easy to make and warmed our hearts. My husband enjoyed it too. At first, it may seem like there are a lot of ingredients from all the spices…but once you measure them all up it is quite easy to prepare. I added some extra green beans and spinach too!
    Definitely making this one again. Loved it!!! Thank you!
