Baking and roasting can be confusing, especially if you are new to being in the kitchen. Essentially, they are somewhat the same; however, just a tad different.

Roasting refers to cooking something, usually in an open dish, at a temperature higher than 400 degrees F.

Can you roast cauliflower stems?

Yes.

It’s best to use two separate trays since they cook through at varying times. Roasted cauliflower stems are great in casserole dishes.

How long is oven roasted cauliflower good for?

Once your cauliflower is roasted, you can let cool and then choose an option:

  • store in the fridge for 3-4 days in an air tight container
  • store in the freezer for up to 3 months

Can oven roasted cauliflower be frozen?

Yes. No matter if you cube or puree, you can freeze cauliflower. You can freeze in an air tight freezer bag or container. We typically like to freeze in freezer safe bags in 2 cup portions.

Can I make roasted cauliflower without oil?

Yes. We’d recommend spraying with water first and roasting as directed below. Alternatively, you can throw it in an air fryer instead of the oven. It will cook quicker, so we recommend watching it carefully.

Can I make more than one head of cauliflower at a time?

Yes! You can repeat the process for however many heads of cauliflower you can easily get on a baking sheet at a time.

While we are only using the florets in the recipe below, we highly recommend that you don’t discard the stems.

You can use the stems in stocks, stir fry recipes or even casseroles. You can even roast the stems themselves. We’d just recommend that you do it separately from the florets.

Ingredients

  • 1 head of cauliflower
  • 2 tbsp olive oil
  • salt and pepper, to taste

Instructions

  • Preheat oven to 400 degrees F.
  • Cut the cauliflower stems apart from the florets. Save the stems for something else (see post for details)
  • Cut the florets into bite size pieces.
  • Place on a baking sheet. Drizzle with oil and salt and pepper. Toss to combine.
  • Bake for 20-25 minutes or until easily pierced with a fork.
  • Let cool for 5 minutes. Serve.
  • Use immediately or place in an air tight container for 3-4 days.
