One thing we hear a lot when people do a 30 day vegan challenge, or jump into veganism for Veganuary, is that they are hungry more and want snack ideas.  These homemade vegan granola bars are perfect for that.

Look, it makes sense.  On one hand, it’s your mind psyching you out.  “ohhhh, you’re eating more vegetables, you must be starving.”  Don’t let your body play tricks on you friends.

The other thing it is true that you could legitimately be hungry.  If you are truly replacing what you did eat before with whole foods, then it’s likely that you body is digesting the foods quicker. Therefore, you feel more hungry.

Luckily, you can quickly prep these easy and quick granola bars for a healthy and filling snack any time during the day.

You only need a minimum of three ingredients and 5 minutes of prep time and then you are good to go. 

There are so many ways that you can customize these bars too.

What ingredients do you need to make homemade vegan granola bars?

The basic ingredients for this recipe are

  • peanut butter (sub for sunbutter if peanut allergy)
  • old fashioned oats
  • maple syrup (or agave) 

Those are the three main ingredients.  You can also add option toppings like you see in our photo above.  Feel free to get really creative.

How do you make homemade vegan granola bars?

This is literally so easy it’s funny to even write out a recipe.

You add all of the ingredients to your bowl and then you combine everything together really well.

Once combined, spoon into a parchment line 8×8 baking pan.

Push the mixture down into one even layer.  Place in the freezer for 30 minutes or in the fridge for at least two hours.

Cut into bars. Store leftovers in the fridge for up to 2 weeks or in the freezer for up to 6 months. 

Are these soft or crispy granola bars?

The bars as written are chewy and soft vegan granola bars. 

However, you can easily make them crispy.  To the bowl when mixing the ingredients, add In 2 tablespoon coconut or canola oil.  Then bake them at 350 F for 20-30 minutes. Let cool before cutting. These will result in a crispy, crunchy vegan granola bar.

Can I make these Top 8 Allergen Free Granola Bars?

First, you want to make sure that your oats are certified gluten free.  Oats are naturally gluten free but because of cross contamination It’s hard to know sometimes. 

Also, you will want to sub the peanut butter for sunbutter. 

Can I prep these vegan granola bars ahead?

Absolutely.  Once these are made, you can store than into your freezer for approximately 6 months. 

Alternatively, you could leave in the fridge in an air tight container for up to 2 weeks.

Another way to prep these would be to double the batch and make a few varieties. 

In the photo above, we made a double batch that fit nicely into a 9×13 casserole dish that we again layered with parchment paper. 

Before pushing into the pan, we split the batter up into four sections and into each section we added some of our topping Ideas. 

This way you are getting four different types of bars in one shot.

Chocolate Cherry Coconut Granola Bars

For this one you would follow the instructions, but before mixing, add in ¾ cup chocolate chips, ½ cup shredded coconut and ½ cup chopped dried cherries. 

Optional, but we also melted down some chocolate chips and drizzled over topped.

Cranberry Almond Granola Bars

For this add In ½ cup chopped dried cranberries and 1 cup chopped almonds.

Pretzels and Cashews Granola Bars

For this one we chopped 1 cup pretzels and 1 cup cashews and added those ingredients into the batter before stirring.

For these, we just added 1 cup mini chocolate chips to the batter for stirring.

Ingredients

  • 1 cup peanut butter (sub for sun butter or other nut butter if allergic)
  • 2 ½ cups old fashioned oats
  • ½ cup maple syrup or agave

  • Add all ingredients to a large bowl and combine everything very well.
  • Spoon into a parchment lined 8×8 baking pan.
  • Push the mixture down into one even layer. 
  • Place in the freezer for 30 minutes or in the fridge for at least two hours.

    Thank you for this recipe. I just wanted something quick and simple and this was it and it was yummy. I made a first big batch of pb and chocolate. And I made a small batch if whatever I had leftover to do a chocolate one. And it was so yummy.

    1/4 cup of pb
    1/2 cup of oats
    Roughly 1/4 c of brown cacao crisp
    About 1/3 cup of maple syrup or less
    3 tsp of cacao powder
    Roughly 1/4 c of chocolate chip and cacao nibs
    1/2tsp of salt

    I put in pb, maple syrup and cacao powder in bowl first, making sure the cacao powder is well mix and throw in my dry ingredients. I taste and add more syrup(cacao powder can be strong) or salt if need it. If you don’t like it super sweet add less maple syrup. Imma do this again and try it with Nutella.

  3. Yummmmyyyyy! I did some chopped cashews + choc chips. I like this recipe bc you can do so many variations and not get tired.
