How do you make dairy free eggnog?
In order to make this vegan eggnog recipe, you’re going to start by soaking your almonds in water. You can either soak in cold water for 6-8 hours or overnight. Or, you have the option to bringing water to a boil, adding the almonds and then turning off the heat to let them soak for 30 minutes. The later method is the perfect way to make a quick dairy free eggnog in under 45 minutes!
Once your almonds have soaked, you’ll want to drain the water completely. Disgard the water and then rinse off the almonds one more time.
DO NOT CONSUME THE DRAINED WATER. Soaking almonds removes chemicals properties like tannins and phytic acid and you do not want to consume this.
After the almonds are drained, add them to a high powdered blender with the almond milk, nutmeg, vanilla extract, kosher salt, and sugar. Blend until everything looks well combined. Then, using a strainer or nut milk bag, strain the mixture into a bottle. Push the veggnog through the strainer with a spoon. You may need to strain it more than one time depending on how small the holes are in your strainer. Save the almond pulp for another recipe.
Add any optional liquor such as brandy, rum, or bourbon to taste a tablespoon at a time. Chill and serve.
