So many people rave over pumpkin recipes for the fall, but do they even know how amazing the apple recipes can be!? This vegan apple pull apart bread is insanely delicious!

If you have ever heard of vegan monkey bread it’s like little balls of dough rolled in a sugar mixture and then baked. It easily allows people to pull a piece off.

This vegan apple bread is similar; however, it’s a loaf of bread and the slices are able to be pulled apart.

This is amazing for parties or get togethers, especially if it’s for breakfast or brunch. It’s great as a dessert as well!

Vegan Apple Pull Apart Bread INGREDIENTS:

Below are notes about some of the ingredients before we get into the full recipe located lower in this post on how to make this vegan fruit pull apart bread recipe:

  • flour – The star of the show, we used bread flour here because we find it works best for yeasted dough
  • yeast – we are using instant yeast so that the recipe goes as fast as possible
  • salt – this helps with not only cooking but for allowing the flavor to come out
  • non dairy milk – Using milk instead of water adds more flavor into the recipe. Since we are adding sweetener to the dough and apple filling, we recommend using an unsweetened variety.
  • maple syrup – added the sweetener directly into the dough really makes this recipe great
  • apples – we used a variety of both tart and sweet apples. We find that the balance it gives it amazing and we highly recommend the variety rather than just one
  • vegan butter – oil in yeasted dough helps with the moisture but also to have the fluffy and tender bread that you crave. Vegan butter specifically helps add a layer of richness as well
  • brown sugar and cinnamon – these two ingredients when combined with the apples is like a spoonful of fall heaven. So so good together.

SUBSTITUTIONS AND VARIATIONS:

  • flour – can also use all-purpose with no other changes needed
  • yeast – you can use active dry yeast but it will take longer to rise
  • non dairy milk – you can replace the non-dairy milk with water in the dough with no other changed needed
  • maple syrup – you can use other sweeteners like agave or date syrup; as well as vegan cane sugar, coconut or date sugar. If using a non-liquid sugar, add it in with the dry ingredients
  • apples – you can only use one type of apple if desired. Also you can swap the apples with another fruit like pears.
  • vegan butter – if you replace this, we’d really only recommend coconut oil. This is helping with the moisture and texture, so you really don’t want to omit it, but it’s possible.

Frequently Asked Questions:

CAN I MAKE THIS VEGAN PULL APART BREAD TOP 8 ALLERGEN FRIENDLY?

There is flour, dairy free milk, and dairy free butter in this recipe.
If you are completely Top 8 Free, use an alternative dairy free milk like oat or hemp for this recipe.  Otherwise, just use one that works for your family.
For the dairy free butter, you want one that is also soy free.  We prefer Earth Balance soy free in the red tub or Flora!
We don’t have great experience using gluten free flour blends to make yeasted dough, so we don’t have a recommendation for that at this time.

CAN I FREEZE THIS VEGAN BREAD RECIPE?

Yes. Let cool completely (without glaze) and freeze in desired sizes. Store in a freezer safe bag or container. Use within 3 months.

CAN I PREP THIS VEGAN APPLE PULL APART BREAD AHEAD?

Yes!  You sure can!   Two options:
1 – Once your bowl is covered to rise for the first time, you can place the bowl in the fridge up to 2 days before you plan to use it (before rising).
Just make the recipe as written, cover and place in fridge until ready to use.  Then pull it out, let it rise until doubled and proceed with the recipe.
2- Make completely and let cool all the way. The store in an air tight container. You can prep it up to 3 days in advance.

What’s an easy way to measure this out and cut?

Since you have to measure out to a specific size and then make multiple cut, we love using a silicone mat instead of just a lightly floured surface!

Ingredients

For the Bread

  • 3 ½ – 4 cups bread flour (can sub with all-purpose)
  • 1 packet instant yeast (1 packet = 2 ¼ tsp)
  • 1 teaspoon salt
  • 1 ½ cups non-dairy milk, warmed (between 115-120˚F)
  • ¼ cup maple syrup (see post for other sugar substitutions)

For the Filling

For the Glaze

Instructions

  • In a large bowl, whisk together 3 ½ cups flour, yeast, and salt. Then, add in the dairy free milk and maple syrup. Using a spatula, fold until mostly combined.  Sprinkle a little more flour if needed to not be sticky and form a ball.
  • Once ball is formed, grease the same bowl mixed in and place the dough ball back into the bowl. Cover with a towel or plastic wrap and let sit for 60-90 minutes in a warm, draft free place until doubled. Grease a 12" x 4.5" loaf pan (If using a standard 8.5" pan, you will need to use 2 pans). Set pan aside.
  • Right before ready, in a small bowl, mix the brown sugar and 2 teaspoon of the cinnamon together for the filling. In a separate bowl, toss the diced apples with the remaining 1 teaspoon of cinnamon. Set both bowls aside.
  • Punch down the dough and pull out onto a lightly floured surface. Roll into a 12"x20" rectangle. Gently spread the softened butter evenly across the dough with a pastry brush. Then evenly sprinkle the brown sugar cinnamon mixture across the butter and finally the diced apple mixture.
  • On the longest side, cut the dough vertically into six 3 ½" x12" strips. Then, cut the opposite direction into six horizontal strips to make squares. Stack the squares into groups of three or five.
  • Place the stacks into the loaf pan until no pieces remain (pushing down if needed to squeeze them in). Sprinkle on top any apple pieces that fall out while stacking.
Tip: Sometimes it helps to hold the pan vertically as you are stacking.
  • Cover pan with a towel or plastic wrap and allow to rise another 30-60 minutes or until almost doubled In size. While rising, preheat oven to 350 degrees F.
  • Bake the loaf for 45-55 minutes. Tent will foil after 30 minutes to prevent burning. Remove from oven and place on a cooling rack for 15-20 minutes. Once cooled to touch, remove and allow to cool completely.
  • Once Cooled, whisk together the powdered sugar and 3 teaspoon of water for the glaze. Add another 1 teaspoon of water if you wish for it to be thinner. Drizzle over the top.
  • Can be served warmed or cool.

Notes

*See post for tips and tricks on perfecting this recipe as well as FAQs and allergen information.
*The squares when cut should each be about 2″ x 3 ½″.
*Note: Directions were updated in October 2023 to simplify the stacking process to make easier as well as the way to make the filling.  This differs from the video instructions shown.

  1. Someone mentioned making it with other fruit. Would everything stay the same if you used peaches or blueberries as it is with apples?

    1. Either works and no other changes needed. We’d recommend testing the internal temperature for doneness, especially if using peaches. 190F(88C)

  2. OOPS!!! never mind… did not read down far enough…I apologize. I can not wait to make this… thank you so very much.

  3. Hi there… I am a baker and was just thrilled to see this wonderful apple bread…although I have a few questions… can I use oat milk? also… what temperature do you set your oven at??? most baking is at 350… although not everything…so I was curious!

  4. Why don’t you add a note to your recipes to make the liquids lukewarm before adding the yeast?? I assume that’s why your recipes don’t work for me….nothing rises, even getting new packets. It’s an oversight, for sure!

    1. We make our recipes as easy as possible so that even inexperienced chefs can make them. That’s why we use instant yeast in our recipes so it’s easier and because of that, we don’t have to recommend warmed liquids. We’ve made the yeasted recipes on our sites 100s of times and it’s simply not necessary. We’d be happy to troubleshoot with you if you’d like.

I just made this! This is your first recipe I tried and it was a hit.I made it to tide people over until thanksgiving dinner. I used active dry yeast and I didn’t have a mixer like you did in the YouTube video but it was super easy to mix by hand. I will try this with other fruit in the future, Thank you!

  6. Oh fiddlesticks. I hope there will be a video for this one because I can’t visualize what to do. lol. Looks amazing!!

Deliciousness!!!😋 When I first saw the instructions I was a lil confused, but watching the video made me realize how easy this recipe was to make. I don’t have a stand mixer and I didn’t have any issues making this. My pull-apart bread came out perfect and I will absolutely be using this recipe again. I didn’t keep them in the oven as long as the recipe said…probably like 38-40 minutes I believe. I put both the frosting from this recipe and the vegan cream cheese frosting I made the other day from their vegan gingerbread cinnamon rolls. YUMMMY!! The bread is so soft and fluffy. 1000% recommend.
