Learn how to make this super easy vegan thanksgiving turkey veggie tray. A quick vegan appetizer that will be a huge hit for your holiday get together!
To start, if you are making the vegan ranch, make that first!
Start with a round tray. About 13 or 14" in diameter.
Fan spinach leaves around the top half.
Layer cut celery pieces and baby carrots.
Take a red bell pepper and slice about 2 inch off the bottom. This will become your turkey’s face. After that, thinly slice whole bell peppers and removed the stems and seeds from each slice after cutting. Then, slice each in half. Alternate the colors and line them up on top of the carrots.
Slice up some cucumbers and layer them on top of the peppers.
Place some cut cauliflower on the sides of the cucumbers and cut broccoli pieces in front of the dip.
Cut a divot out of half a baby carrot to use as the nose. Break a toothpick in half and place the broken side into the carrot and the sharp side in bell pepper as seen in the photos.
Place two edible candy eyeballs on the pepper. If you prefer, you can use pieces of black olives for the eyes instead.
We also like to keep some extra cut up in order to refill the tray.
