Add the maple syrup to a small saucepan over medium heat. Once it starts to sizzle, add the diced apples and stir. Let cook for 2 minutes, stirring occasionally.
Add the cinnamon, nutmeg, and optional cardamom. Stir together and cook for 1 minutes.
Add in the oats and dairy free milk. Stir together and cook for 5 minutes. Stirring occasionally.
Remove from heat and serve. Careful, it will be hot.
