To a large heavy bottomed pot, add a few inches of oil. Heat to approximately 350 degrees F. Line a baking sheet with paper towels.
In a large bowl, add flour, brown sugar, baking powder, salt, cinnamon and nutmeg. Whisk together.
In a separate bowl, add non dairy milk, applesauce, butter, and vanilla. Stir wet ingredients into the dry until just combined. Do not overmix.
Add chopped apples to the batter and stir again, just until combined well, making sure not to overmix.
Once oil is hot, drop ¼ cup of batter into the oil. Do not overcrowd your pot and work In batches to use all the batter. Fry until golden brown, about 2-3 minutes per side, flipping halfway. Remove and place on prepared baking sheet.
For the Glaze
Add all the glaze ingredients, except salt, to a bowl and whisk together well, Allow fritters to cool and dip or drizzle glaze over the top. Sprinkle with salt if desired.
