How to Roast Red Peppers

Preheat oven to broil.
Rub olive oil all over the pepper.
Place on a baking sheet and place under the broiler. Carefully rotating every 3-4 minutes until the entire pepper is blackened.
Remove and cover with foil to trap the heat.
Let cool to room temperature or leave overnight.
Peel all the skin off, remove the stem and seeds. Discard.
Slice red pepper into strips.
Use immediately or place in an air tight container for 3-4 days.
