Oven Roasted Baby Potatoes with Garlic
One of the easiest and most flavorful vegan side dishes, these oven roasted baby potatoes with garlic will blow you away!
Servings 4 servings
- 24 oz baby potatoes
- 2 tbsp olive oil
- 8 cloves garlic, minced
- salt and pepper, to taste
Preheat oven to 400 degrees F.
Wash all the potatoes. Cut them in half.
Place on a baking sheet with the garlic. Drizzle with oil, salt and pepper.
Bake for 40-50 minutes or until a fork easily pierces through to the middle. Time dependent on how large potatoes are.
Remove and let cool for 5 minutes. Serve.
Use immediately or place in an air tight container for 3-4 days.
