Homemade Vegan Granola Bars

If you are looking for a quick and easy vegan meal prep snack idea, then these homemade vegan granola bars are a winner!  Just 3 ingredients and can be Top 8 Allergen Free.

Equipment

  • 8x8 pan
  • parchment paper

Ingredients

  • 1 cup peanut butter (sub for sun butter or other nut butter if allergic)
  • 2 ½ cups old fashioned oats
  • ½ cup maple syrup or agave

Instructions

  • Add all ingredients to a large bowl and combine everything very well.
  • Spoon into a parchment lined 8x8 baking pan.
  • Push the mixture down into one even layer. 
  • Place in the freezer for 30 minutes or in the fridge for at least two hours.
  • Cut into bars. Store leftovers in the fridge for up to 2 weeks or in the freezer for up to 6 months.
