Vegan Fried Mac and Cheese Bites

If you are looking for a leftover idea for your vegan mac and cheese, then you must make these vegan fried mac and cheese balls! They are epically divine!

Ingredients

Wet Ingredients

  • ½ cup ground flax
  • 1 ½ cups water

Dry Ingredients

Instructions

  • In a bowl, mix together the wet ingredients. Set aside for 10 minutes.
  • In a separate bowl, mix together the dry ingredients.
  • Bring a large skillet filled with 3 inches of oil to 375 degrees F.
  • After 10 minutes, use a small cookie scoop to get roughly 2 tablespoon worth of cold macaroni and cheese. Press together into a ball shape.
  • Dip in the wet ingredients.
  • Roll around in the breadcrumb mixture.
  • Once oil is to temp, drop a ball inside and cook for 1-2 minutes until golden brown on all sides. Remove and drain off excess oil. Place on paper towel lined plate.
  • Repeat with remaining balls.
  • Serve!
