How to Roast Sweet Potatoes

This easy and delicious recipe will teach you how to roast sweet potatoes for mashed or cubed sweet potatoes at home in no time!

  • Preheat oven to 400 degrees F.

For Mashed Sweet Potatoes or Sweet Potato Puree

  • Use a fork and poke hole all over the sweet potatoes.
  • Place on a baking sheet. Rub with oil.
  • Bake for 50-60 minutes or until a fork easily pierces through to the middle. Time dependent on how large potatoes are.
  • Remove and let cool to touch.
  • Peel the skin off and mash. Add seasoning if desired.
  • If pureeing for pies - Add to a high powdered blender and blender.

For Roasted Cubed Sweet Potatoes

  • Use a potato peeler to remove skin.
  • Slice in half the cube into 1 inch pieces.
  • Drizzle with oil and any optional spices. Toss to combine.
  • Bake for 35-45 minutes or until easily pierced with a fork.
  • Use immediately or place in an air tight container for 3-4 days.
