For Mashed Sweet Potatoes or Sweet Potato Puree
Use a fork and poke hole all over the sweet potatoes.
Place on a baking sheet. Rub with oil.
Bake for 50-60 minutes or until a fork easily pierces through to the middle. Time dependent on how large potatoes are.
Remove and let cool to touch.
Peel the skin off and mash. Add seasoning if desired.
If pureeing for pies - Add to a high powdered blender and blender.
For Roasted Cubed Sweet Potatoes
Use a potato peeler to remove skin.
Slice in half the cube into 1 inch pieces.
Drizzle with oil and any optional spices. Toss to combine.
Bake for 35-45 minutes or until easily pierced with a fork.
Use immediately or place in an air tight container for 3-4 days.
