Vegan Elderberry Syrup

Elderberries are one of the most used medicinal plants in the world and now you can make a homemade vegan elderberry syrup easily.

Ingredients

Elderberry Syrup

  • 3 ½ water
  • cup dried elderberries (or double the amount fresh or frozen)
  • 2 tablespoon fresh ginger
  • 2 cinnamon sticks (or 1 teaspoon ground cinnamon)
  • 10 whole cloves (or ½ teaspoon ground cloves)
  • 1 cup homemade date syrup (see below)
  • juice of 1 lemon

Homemade Date Syrup

  • 1 heaping cup medjool dates
  • ¾ cup water (+ more boiling water)

Instructions

Stovetop Instructions

  • Pour water into a medium pot.
  • Add dried elderberries, ginger, cinnamon sticks, and whole cloves. Bring to a boil and then cover and reduce to a simmer for about 45 minutes to 1 hour until the liquid has reduced by almost half.
  • Remove from heat and let cool.
  • Using a sieve over a bowl or quart measuring cup, pour the mixture through. Use the back for a spoon to push down on the berries and get as much juice out as possible.
  • Discard the elderberries and let the liquid cool to lukewarm.
  • Add in date syrup and lemon juice. Stir well.
  • Pour into a large glass jar with a tight fitting lid and store in the fridge.
  • Take daily for its immune boosting properties.

Instant Pot Instructions

  • Pour water, elderberries, ginger, cinnamon sticks and whole cloves into the Instant Pot. Stir together.
  • Add lid and make sure valve is sealed.
  • Cook on manual high pressure for 15 minutes.
  • Let pressure naturally release for 15 minutes, then quick release the rest of the pressure.
  • Remove lid and following steps above starting at step 3.

For the Date Syrup

  • While the elderberry syrup is cooking.
    Pit dates (or use pre-pitted). Add to a bowl.
  • Pour boiling hot water over the bowl and let sit for 30 minutes.
  • Discard the water.
  • To a high powered blender, add the soaked dates and ¾ cup fresh water. Blend until smooth about 2 minutes.
  • *You will have some date syrup left over. Use to dip in apples or any recipe that calls for date syrup or sugar.
