5 Ingredient Vegan Pizza Lunchables

For the Pizza Discs
- 1 ¾ cups bread flour (use gluten free flour if needed)
- 1 cup coconut cream (you can use just the thick part on top or shake the can well and use the entire thing)
For the Toppings
- ½ cup pizza sauce
- ½ cup vegan cheese
- 24 slices vegan pepperoni
Preheat oven to 550 degrees F.
Add flour to a large bowl. Make a well in the middle of your flour.
Then add coconut cream to well.
Use a spatula to combine ingredients together until a ball almost completely forms.
Turn out dough ball onto a lightly flour surface and knead together for a few minutes, adding a tablespoon more flour at a time, until no longer sticky.
Lay out a sheet of parchment paper on a large baking sheet and sprinkle corn flour down (or more flour that you are using).
Divide the dough ball into 8 equal pizzas.
Use fingers to gently push out dough into a 5-6" circle.
Place each piece of dough on the baking sheet.
Bake pizza discs for 6-8-12 minutes or until starting to turn golden brown on the crust.
Remove from oven and brush the crust with vegan butter if desired.
Let cool.
Use in a lunchbox with pizza sauce, vegan cheese and pepperoni divided evenly.
