In a large bowl, whisk together the flour, sugar, baking powder, nutmeg, and salt.
Next add in dairy free eggnog and melted (but not hot) coconut oil.
Let the mixture sit for 3-5 minutes. This will help it set up.
While the batter is setting up, turn on your waffle maker and grease it with either coconut oil, or a dairy free spray.
Bake waffles according to your waffle makers instructions.
Repeat with remaining batter.
*This recipe makes 4 Belgian waffles. If using a smaller waffle maker, you could get 6-8.
