Cajun Sweet Potatoes and Black Beans Rice Bowls

Ingredients

  • 1 cup brown rice
  • 2 sweet potatoes
  • 1-2 tablespoon cajun seasoning (2 is really spicy, adjust as needed)
  • 2 tablespoon olive oil (if oil free, spray with water and use parchment paper)
  • 1 can black beans, drained and rinsed

Optional Toppings

  • avocado slices
  • diced tomatoes
  • green onions
  • red onions
  • salsa
  • vegan sour cream or cheese

Instructions

  • Preheat oven to 425 degrees F
  • Cook rice according to the instructions.
    *we did a quick cook brown rice
  • Peel and cube sweet potatoes.
  • Toss with olive oil and cajun seasoning. 
  • Bake for 25-35 or until a fork pierces through easily, flipping once halfway through. 
  • Warm the black beans. 
  • Put the bowl together by laying rice at the bottom, then topping with some of the sweet potatoes and black beans. Plus, any additional toppings that you want to add.
