- 1 cup brown rice
- 2 sweet potatoes
- 1-2 tablespoon cajun seasoning (2 is really spicy, adjust as needed)
- 2 tablespoon olive oil (if oil free, spray with water and use parchment paper)
- 1 can black beans, drained and rinsed
Optional Toppings
- avocado slices
- diced tomatoes
- green onions
- red onions
- salsa
- vegan sour cream or cheese
Preheat oven to 425 degrees F
Cook rice according to the instructions. *we did a quick cook brown rice Peel and cube sweet potatoes.
Toss with olive oil and cajun seasoning.
Bake for 25-35 or until a fork pierces through easily, flipping once halfway through.
Warm the black beans.
Put the bowl together by laying rice at the bottom, then topping with some of the sweet potatoes and black beans. Plus, any additional toppings that you want to add.
