Dairy Free Brownies - Vegan! (Caramel Sauce Optional)

These dairy free brownies are gooey and rich with flavor. Top with delicious homemade dairy free caramel sauce for the most decadent dairy free dessert combo. These are also yummy vegan brownies!

  • To make the flax eggs, in a small bowl, combine the ground flax seeds and water. Stir gently and let sit for 15 minutes until a gelatinous mixture forms. 
  • Preheat oven to 350 degrees. 
  • Grease a 9x9 pan. (If you want to easily pull out brownies, lay parchment paper down first, then grease the paper lightly.)
  • In a large mixing bowl, add the softened butter and both sugars. Beat on low speed until well incorporated - about 3-4 minutes. 
  • 4. Add in half the "egg" mixture. Beat just until combined. Then other half of "egg" mixture. Beat again. 
  • Add vanilla. Beat again just until combined.
  • To the bowl, add the flour, cocoa and salt. Stir with a flat spatula. A very thick dough will form.
  • Fold in chocolate.*
  • Pour into 9x9 pan and spread evenly.
  • Bake for 30-40 minutes.
  • Remove and let cool completely before cutting.  Cut into at least 9 pieces, Smaller sizes can be cut.

* For the dairy free chocolate, you want to find a dairy free or vegan source of chocolate that is between 50-60% cocoa. Chocolates with higher percentage of cocoa, will make these brownies very bitter, so it's important to discuss this change.
- We use 2 bars and chop of the bars until roughly a little larger than chocolate chunks.
-Alternatively, you can just use the same amount of Enjoy life Chocolate Chunks.
**If you are having a hard time locating chocolate bars, you can use our homemade dairy free chocolate recipe and spread it out flat on a sheet, harden in freezer and then chop it up into pieces until you have 1 ½ cups for this recipe. Reserve the rest for another recipe.
