In a large bowl, add dairy free milk and vinegar. Let sit for 10 minutes. *This makes dairy free buttermilk. Add the pumpkin puree and vanilla. Stir to combine with a spatula.
Add all the dry ingredients into a bowl and stir with your spatula until very well combined, but make sure not to over mix.
Follow instructions on waffle maker for amount and length of time to cook.
Repeat until all the batter is used.
Serve with maple syrup or other optional toppings like our maple cinnamon butter.
