Vegan Glazed Carrots

These Vegan Glazed Carrots are super easy to make, taking under 15 minutes! The sweet glaze will have everyone asking for more! A great dairy free side dish for all to enjoy!

Ingredients

  • 1 tablespoon coconut oil (*See post notes if coconut allergy)
  • 1 lb baby carrots
  • 2 tablespoon brown sugar
  • 2 tablespoon agave (*See post notes if not vegan)
  • 1 teaspoon cinnamon
  • pepper, to taste

Instructions

  • Melt coconut oil over medium heat in a large skillet.
  • Once melted, add in baby carrots. Stir to coat with the coconut oil. Let cook for 3 minutes.
  • Add in remaining ingredients and stir well. 
  • Reduce heat to medium low and cook carrots for an additional 7-9 minutes or until carrots are easily pierced with a fork.
  • Remove from heat and serve.
