Ingredients

For Caesar Dressing

For the Wraps

  • 1 15oz can chickpeas, drained and rinsed
  • 2 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 hearts of romaine, chopped
  • 1 ½ cups croutons, divided
  • 1 large tomatoes, sliced thin
  • 1 avocado, sliced thin
  • 4 burrito tortilla shells

Instructions

For the Dressing

  • Using a food processor, add ingredients and blend until smooth. Set aside.

For the Wraps

  • In a bowl, combine the chickpeas, lemon juice, garlic powder, smoked paprika, salt and pepper. Stir together well.
  • Lay out a tortilla. Spread 2-3 tablespoon dressing in a line. Divide equally chickpeas, lettuce, tomatoes, avocado and croutons. Fold up and make the remaining tortillas.
  • Serve with remaining dressing as desired
