Gluten Free Vegan Chocolate Chip Cookies Recipe

Easy gluten vegan chocolate chip cookies will have you questioning if it's really vegan? Simple, one bowl, and can be Top 8 Allergen Free.

Instructions

  • Into a large bowl, whisk together both flours, baking soda and salt.
  • In a separate bowl, add melted vegan butter, non-dairy milk and both sugars. Whisk together well. Add applesauce and vanilla and whisk again.
  • Add wet mixture into dry mixture and fold together with a spatula.
  • Add chocolate chips and use a spatula to fold the chips in. 
  • Set bowl aside for 30 minutes (this helps hydrated the gluten free flour - don't skip for best results).
  • Preheat oven to 350˚F (177˚C).
  • Use a cookie scoop to make 12 cookies and place on a baking sheet.
  • Bake the cookies for 10 - 13 mins.
  • Remove from oven and let rest about 5 mins to set. Add salt flakes if desired.
  • Store any leftovers in an air tight container.
