Preheat oven to 350˚F (177˚C). Line a baking sheet with parchment paper.
In a medium bowl, add flour, baking soda, and salt. Whisk together. Set aside.
In a large bowl, add vegan butter, tahini and both sugars. Beat with a mixer (stand or hand) until light and creamy about 3-5 mins. Scrape down the sides.
Add apple sauce and beat them until combined (about 15 - 20 seconds). Scrap down again.
Add the flour mixture and beat on low just until combined. Do not overmix.
Add chocolate chips and use a spatula to fold the chips in.
Use a cookie scoop to make 12 cookies and place on a baking sheet about 2 inches apart.
Bake the cookies for 11 - 13 minutes or until the edges begin to brown.
Remove from oven and let cool about 10.
Store any leftovers in an air tight container.
